DGGrayScaleImage

A UIImage that represents a grayscale version of another UIImage. (iOS / ObjC)

There's support for accurate (raw) grayscale conversion, natural grayscale, and NTSC natural grayscale.

Accurate grayscale means normalizing the colors in RGB space to grayscale range, while natural grayscale means normalizing using special multipliers that represent the amount of each color as perceived by the eye (i.e red will get a stronger gray color because it is emphasized by the brain).
