Allow using the library with the default WireMock Docker Image

Proposal
Currently WireMock Docker does not include directories for mappings and files, and one has to extend the image to use it with Testconatiners Go: testcontainers/testcontainers-go#1336 . It would be nice to extend the official image so that it is no longer a problem
