I've been thinking to build a fairly simple package to make nemo files CF/comodo/S-grid/...-compliant.
I'm mainly interested in something that makes easy to use cf_xarray with nemo data, so analyses are more general and can be performed on different models/configurations. As you said, it's also good to make nemo more friendly to packages downstream of xarray, such as xgcm, pint_xarray, xorca, ...
Luckily I've seen your discussion about xorca and xnemogcm, and it looks like nemo_cf is what I'm looking for. You already put some thoughts into it, so there's no point in building something from scratch, especially because right now I only have a bunch of quick and dirty tools. Glancing through the notebook you shared, it looks like you still have to implement a few features, so I thought I'd let you know that I'd be happy to chip in!
