We should remove all references to JsonWebSignature2020 as that work item is being withdrawn.

+1 , we need to switch to vc+ld+jwt and vp+ld+jwt

PR1: Remove JSONWebsignature2020, Remove Ed25519Signature2018
PR2: Remove proof generation scripts, decide if we are supporting VC-JWTS and Data integrity proofs, and if so add references to the correct media types.
