Docs in `Document` gone after `convert()`, `convertToPdf()`

When defining a Document instance and doing a convert() on it, the original document is gone.
We therefore cannot repeat conversions and have to create a new document.
I think this is, because we did not want documents to linger around in some distant place in filesystem, just because of transforms.
