Version number is not set correctly in the `package.yaml` and cabal files

We have released version 1.0.0 but the version number in the package.yaml and cabal files do not fit. In particular cooked-validators shows 0.2.0 and examples shows 0.0.0.
This should be fix for the next release (v2.0.0) and maybe the past release (so which would be a v1.0.1)
It's now fixed: e4de91f, released as version 1.0.1.
@gabrielhdt I think you should push a v1 branch for that commit so that we can continue fixing stuff for v1 if needed at some point. For now, the tagged commit is not on any branch.
You can continue fixing stuff just by checking out the tag, can't you?
