Use INFO log level by default in tests

The current DEBUG log level is too verbose.
Agreed .. do we need a way to switch it for CI runs though to enable troubleshooting failures that we cant reproduce locally?
Maybe thats overthinking it though and we can deal with it when the problem comes up.
