the default ’stable’ python version is not valid

the default value in https://github.com/tree-sitter/workflows/blob/main/.github/workflows/package-pypi.yml#L16 , stable is not valid an lead to this error:
Error: The version 'stable' with architecture 'x64' was not found for Ubuntu 22.04.
