[Git Feature] Tagged Docker Hub image builds

It would be nice to have a v1.0 and v1.1 builds available rather than always having to use latest for Docker image builds.
After unnecessary battles with Docker Hub, I think this is going to be a manual process. Any regex I tried resulted in weird errors. Right now v1.0 is done manually as follows:
