Add support for content with Chinese language OCR

Use case drawn from SUL Text Search Study Report (July 2019)
Use case:
The Harvard Yenching Collection includes bound items in Chinese received by SUL's East Asia Library from Hoover in 2002. Some of them are rare and older. Like the NDC collection, all were digitized as part of Google Books and will be in SDR soon. These collections are treasures. All on 20th century Asia. Having all of this content in Spotlight and Searchworks and searchable would be hugely transformational. Curator: Regan Murphy Kao

Our implementation of the IIIF Content Search API does not currently support the level of analysis for CJK query terms as provided for SearchWorks. However, the Content Search API supports CJK text, and examples of CJK transcription via annotation do exist.
