GatewayParameters `Image` parity with Gloo Edge Helm values `Image` struct

Is your feature request related to a problem? Please describe.
The Image options on the GatewayParameters are lacking when compared to the Image options configurable via helm.
Specifically, the variant option has no correlated equivalent.
To some degree, the variant can be worked around given the user knows the correct image name or tag format to get the desired image.
