How to edit email header without editing the published tempates in vendor

I am using minty template and i need to set my logo and other text on the logo. However i cant seem to know how that logo is editable. The contentstart in vendor directory doesnt seem to have the logo position either so now my emails are sent without a logo, just a plain blue rectangle at the top.

I have seen the config file and was able to change the logo over there.
