Works with my NUC7i7BNH perfectly - also BT and WiFi! Simply recommended!
Had only to read in addition these tricks and tools:
- Download recovery of Big Sur: corpnewt/gibMacOS#200
- Had to set in config.plist Misc -> Security -> ScanPolicy -> 0 (https://github.com/dortania/OpenCore-Install-Guide/blob/3576855a78a5f87a2ba9aa38e92b4cd7d36d3748/troubleshooting/extended/opencore-issues.md#stuck-on-ocb-system-has-no-boot-entries)
- Set boot disk with mountEFI: https://github.com/corpnewt/MountEFI
