I think you already know PICO-8, but just in case:

It's a rather new framework to build 8-bit games. It's used for education and as a starting point to get kids into coding.
There is a variety of emulators from Windows to RasPi, but an ESP based emulator would be really great for the obvious reasons.
Being able to turn a hardware emulator on and off without further consideration is a huge plus for anyone new to coding, and most everyone else too. I have an Odroid myself and it would be the perfect hardware to show your PICO-8 creations to others. You could just switch it on and pass it to others to play your game.
