Running Ubuntu 20.04, RAPIDS 21.12, CUDA 11.5 on local docker build.

- Add note about multi-gpu may require
NVIDIA_VISIBLE_DEVICES=1in .env or in docker command - Unify Demo and Notebook Datasets - hard to collect all
