docs: Add grafana and pyroscope to the testing.md docs

Description of Problem / Feature Request
We currently don't document two cool tools that are really nice for local development:
- Grafana instance with default dashboard
- Pyroscope instance with profiling data
Expected Outcome
They are documented
Actual Outcome
Not documented
