How can I re-add the custom CSS automatically with docker compose?
Currently I have to re-add the CSS manually every time the server updates or restarts.

Themes shouldn't reset every time you restart the server. Are you setting them in dashboard>General settings?
Yes indeed
Css should not reset, there is something else that's causing the issue which is not caused by this css
