Clean up:
- https://github.com/otovo/docker-compose-demo/blob/main/docker-compose.yml#L53
- Test gunicorn config like this
- Remove .python-version
- Include .env (global .gitignore ignored it, when it was meant to be included)
- Clean up dockerfile
- Remove --keep-runtime typing
