Update README with new community meeting schedule

Describe the bug
The meeting information in the README currently has the old schedule of just the Thursday meetings, but now there's meetings for both APAC and EMEA. The zoom link and the meeting note link is out of date too.

Expected behavior
Meeting info to be accurate and the same as the meeting info section in the current meeting note doc.
Additional context
I'm happy to make this doc change, adding this issue to map to the PR.
