Which sensor data value corresponds to which PM type?

I did not find official documentation on this, but with a little guessing I suppose that:
"value_type": "P1" is the data for PM10
and
"value_type": "P2" is the data for PM2?
Am I correct?

you are (nearly) correct. P1 is PM10 and P2 is PM2.5.
