build(desktop): using pre-release identifier in version prevent building

Using versions containing pre-release identifier like 0.0.4-dev will prevent to build for windows
Error failed to bundle project: optional pre-release identifier in app version must be numeric-only and cannot be greater than 65535 for msi target
Reading the docs the solution might be to switch from msi to nsis
