feat: better manage orphaned CRDs

Is your feature request related to a problem? Please describe.
This is similar to #83 where CRDs are left behind when Prometheus is uninstalled. We have other installs - such as nginx and cert-manager - where they are installed as part of the deployment process, but they are never cleaned up (they persist after an uninstall).

Removal of CRDs when project is uninstalled.
