Update examples and vignettes for Census 2021 data where appropriate

While we don't have all 2021 Census data available, at least some is available now and we should have some examples with 2021 data.
Addressed in v0.5.1, although some examples from 2016 still remain. Which is probably good, it shows that it has data from several censuses. Closing for now.
