Feature Request: Support Vault KV Version 2

Are there plans to support Vault's versioned KV store (Version 2) happy to do a proof of concept PR if this is something that konfig would like support in the future.
We don't have an immediate need ourselves, but it would definitely be a feature we would like to include and eventually use, so if you want to do a proof of concept PR, that'd be greatly appreciated!
Sounds great! I'll get started on the POC in a few days.
