Revert 15.0.x image for Infinispan when we are close to KC26 release

#819 changed the default Infinispan image to 15.0.x which is based on the current version of the release branch. We should revert to the previous version - latest ISPN release.
Or, we can also leave this as is, as using the 15.0.x may be useful to consume the latest changes to Infinispan without waiting for the release and it can also give us a quick heads-up if there is some breaking change for Keycloak.
