NotImplemented Exception writing CompanyProfile to JSON File

I'm using this package in my own Fake API so it returns as close to real CH Objects from a NET Core WebAPI from JSON files within the WebAPI not CH itself.

Everything is fine so far, until am not able to serialise CompanyProfile to JSON files.

List<CompanyProfile> companyProfiles = new List<CompanyProfile>();
File.WriteAllText(CompanyProfilesPath, JsonConvert.SerializeObject(companyProfiles, Formatting.Indented));

This gives the following exception as the JsonConverter Write function for OptionalDateJsonConverter has not been implemented.

Please can this be implemented as soon as possible! 🙏

I had the same problem so I've opened a PR which will resolve the issue, feel free to nick my code from the patch to patch your copy of the library in the meantime.

@adancy thanks for the contribution, I've merged this in, and is part of the 7.10.1 Release.

If you do come across any more issues please do raise them and if you have time to create a patch I'll happily try to merge them in ASAP.
