documentation: update dataset for tutorial

The getting started tutorial uses dataset 11883 to create training data. It appears this dataset does not exist at the given location anymore. Perhaps it has been moved to make space for newer simulation sets.
Todos:
- update processing config files to process a different dataset
- update naming in input file lists of training config
- make sure everything runs through with new dataset
