Custom Strategies documentation needs to be updated

As discussed on Discord, the documentation on https://developers.home-assistant.io/docs/frontend/custom-ui/custom-strategy covers the legacy implementation and doesn't include the new implementation.
Just adding an issue so it's easier to track!
