About how to catch mmwave feature

I'm lost in how to collect training data (mmwave feature) for gesture recognition project.
I wanna collect feature data from serial port, but I couldn't know how to accomplish extract hex data.
could you share your experiment, that how to collect data using serial port from gesture recognition project?
