Migrate base image to Eclipse Temurin

The AdoptOpenJDK docker hub docs state that the AdoptOpenJDK images have been deprecated and to switch over to Eclipse Temurin.
Alpine based images are available from Temurin now. – adoptium/containers#72 (comment)
