Longer recordings, wait until user clicks finish OR 5 seconds

Is your feature request related to a problem? Please describe.
It's annoying for the speech_to_text to end abruptly when the user stops speaking. Instead, the speech-to-text will stop listening when the user clicks, finish OR 5 seconds has passed with no update to word
