HDR metadata is not properly copied when transcoding

FFmpeg does not properly copy HDR metadata when transcoding. The output video will have the default HDR settings which are likely incorrect.

To followup, HDR support is completely broken because of this issue. HDR to SDR tonemapping doesn't work and HDR content may look desaturated/washed out.
