[FEATURE] Schedule Docker image generation

Is your feature request related to a problem?
The Docker images are only build once a new release of this package is published. This leads to the fact that everyone using the latest tag (which is the default behavior when the tag is omitted) might use the image with outdated dependencies.
Describe the solution you'd like
Docker image builds for the latest tag should be scheduled, e.g. one build per week, to keep dependencies up-to-date.
