Update nginx-alpine version

For security reasons, nginx-alpine needs to be updated.
However, latest alpine images do not contain ruby 2.7 so we need to find workaround.
HTTPS needs to be rewritten in the version that's included in the new ngnx-alpine (ruby 3.x image)
