Kong Examples no longer run

Summary

It looks like there was an update to the container we use for running the Kong example it now fails when run.

Steps to Reproduce

Run

$ ./examples/kong/start

Expected Results

The script should run successfully.

Actual Results

The script errors out with a message from the Kong container.
