Move to using either latest or stable image for OpenAPI generator

Is your feature request related to a problem? Please describe.
Currently we use a hard-coded version (v4.3.1), which has to be kept both in this repo and in the dap-wiki repo (relevant) for consistency. We should try to use an image that will have updates, that way we can take advantage of new features and bug fixes as well as not have to worry about updating the image version.
