Introduce server health check endpoint

@csi-lk 👋 Would you be open to introducing a server health check endpoint? If not I can fork but I'd rather make a contribution if you and/or others find it useful. The reason for the introduction is to wait for the SES service to become available to run any necessary tests in my application.
The intended endpoint introduced will be a GET / responding with a 200 👍
