Replace Grafana Agent with Grafana Alloy

Grafana Alloy is the new name for our distribution of the OTel collector.
Grafana Agent has been deprecated and is in Long-Term Support (LTS) through October 31, 2025.
Grafana Agent will reach an End-of-Life (EOL) on November 1, 2025.

I have implemented a "simple" version for a system at work, and it was quite a struggle even with a generated configuration. It might be wise to wait a little bit until the automatic config generation options are a bit more evolved.
Initially I thought the EOL was ending this year. Seems it's next year.
Closing as it's not pressing, is involved and is not worth the trouble yet.
