Remove Documents Folder + Content

In an effort to reduce the repo complexity, I think we should keep random notes off the repo. Maybe wait for the notes to be transcribed and then remove it.
I like the idea of keeping the repo clean.
@sgoggins would you be able to extract the elements form you notes relevant to the metrics and create and pull request against the markdown files?
