Replace gatsby-remark-reading-time

https://github.com/syntra/gatsby-remark-reading-time has not been maintained in some time. There's a fork at https://github.com/syntra/gatsby-remark-reading-time, but that also seems to not have been maintained in some time.

Neither of these plugins do much more than simply create a new node and calculate the reading time via https://www.npmjs.com/package/reading-time .

I think it makes sense to just pull the functionality directly into beleyblog instead of dealing with repeated abandoned projects.
