Rename to wasi-rs

In the BA component-model meeting, we discussed the generic name for this project is a little misleading since we do not intend to expand this project to be polyglot.
This issue proposes renaming the project to wasi-rs.
Let's keep this up for a few more days and close/rename roundabouts next week?
