capture packets in a more cross-platform way

maybe use libpcap on Linux and MacOS and npcap on Windows?

that's the meat of this request/issue. i'm sure audio will be easily adapted to other platforms.

if this is just a hobby/demo/toy, then never mind, of course.

hi - in the development version I only rely on tcpdump and nothing else anymore. I'm hoping to also do a Windows port. npcap appears to have somewhat of a commercial license which might be an issue.
