Try to eliminate dropdowns where possible

Notably:
- Input device selection (maybe implement as fully rendered non-dropdown list?)
- Input channel count selection (select 1 or 2 from adjacent options group)
- Options menu - this can be a "more menu" dropdown on small screens but makes more sense to be fully rendered without an extra click if there's enough space.
I'm gonna leave input device selection how it is for now because it's sort of hard to know how many input devices the user could have
