Revisit prj.conf and KConfig section for Thingy91 sensors

I encountered an issue where Thingy91's sensors would not get initialized when removing the THINGY_SENSORS section.
The samples/iotc-sensors-gps/boards/thingy91_nrf9160ns.conf solution should be more elegant, but doesn't seem to work properly.
I'm putting this on the back burner so we can focus on the 1.6.1 SDK upgrade and make sure to re-visit this issue later.
