I think that the full server implementation is probably unnecessary for the WebThings Gateway, but at least some of it may need to be implemented because the Sonoff device will be expecting some responses in certain formats.
An add-on for ewelink would be great. There's a 12v sonoff zigbee switch that would save some of the constant drain on the batteries of the wi-fi switch I'm using now. The webthings hub would make it possible to tell it to shut off when the weather's bad, freezing etc.
