docs: update payment pointer to wallet address

Review the Web Mon docs and update "payment pointer" references to "wallet address" where appropriate.

For example, the definition for payment pointer in the glossary starts out with, "Every Open Payments account within a digital wallet, or the Open Payments-enabled digital wallet itself (depending on implementation), is identified by a unique URL called a payment pointer."

Note that the use of "payment pointer" might be appropriate in certain contexts, so this isn't an exercise in find/replace.

I'm unable to run the WM docs locally because of an error that HJ will look in to, but this issue is completed in my own branch. I'll push when I'm able to test my updates.
