Hello,
In my country, we have a DPI that doesn't outright block stuff but instead makes the internet "unreliable". The DPI inspects SSL Client HELO, and randomly chooses such packets to then blackhole the connection. Alternatively, it may delay the response by many seconds (possible overload). When I change the sni I am using in my vpn program, it works ok for a few minutes then the shittification gets switched on.

The auto-ttl and fragmentation options help, but is there a way to have goodbyedpi aggressively send multiple copies of the same packet or find a way to beat such internet shittification ?

UDP bypasses this, but the DPI at random times of the day will throttle any unidentifiable udp traffic to 2 Mbps.
Protocols like QUIC are totally blocked (some versions of it).

If there's any suggestion of combination of settings to beat this or if there's any captures I can send privately to assist, let me know.

This is a reasonable proposal, I have an idea to implement packet stuffing, will do retransmissions as well.
