Transition to the Carpentries Workbench infrastructure

We should probably finalize & merge the open PRs before going through with the conversion.
It looks like they're still actively developing the automated transition workflow, so we might like to wait a little longer or maybe do it manually. They plan to transition all official Carpentries lessons by January 2023, so we could wait until after then.
