Adding a local elasticsearch docker instance for offline usage

I have tried to build a local docker environment based and with this repository and there are items which are constrain the service to only be based on "online" services.
I want to install the service on a satellite based connection which requires to be offline some of the time.
For many the mobile devices and version is enough but when working with complex subjects smartphones and mobile devices are out of the question.
Would it be possible to put some efforts into such a task?
