Problem to be solved
We want a template repo that allows people to get started with DVs on their own, and demonstrates the value of a multi-client middleware based DV from the get-go.
Proposed solution
Update this 3 of 4 cluster to a 5 of 6. Set the compose file up to have a different validator client for each of them (or the simnet mock for the ones that aren't ready yet.
Below are sub tickets for supporting each client. This ticket is responsible for getting the repo ready for the new tickets. This ticket should change the docker compose and subsequently re-do the readme here and in the docs site to explain how this repo works.

Out of scope
This ticket and the multi-client support are pre-cursors to doing a grafana dashboard making contest with @thomasheremans and Brett. Fix it if it's broken, but work under the assumption that we will be getting the community to make a number of them in the coming weeks.
